Rice and curry is the staple food in Sri Lanka. Some have it for all 3 main meals and loves it all the time. At least they eat it once a day at a minimum. Ideally it has red or white rice, some curries such as Dhal curry cooked in coconut milk, green leaves cooked with scraped coconut flesh, papadam and fish, chicken, shrimp, calamari or egg. You need to combine a little from everything and make a small ball shape and put it into your mouth. Eating using your hands gives a better taste than using fork or spoon.

6. Koththu

Koththu is a Sri Lankan dish made from a roti called Godhamba roti and originated in Batticaloa. The roti is mixed with vegetables, egg, and/or meat, and spices. Koththu can be found in almost all parts of Sri Lanka and is generally eaten for dinner. The most common varieties of koththu are chicken, egg and vegetable koththu available for vegetarians.

Cheese koththu has recently been introduced and becoming more popular.

The making of Koththu is interesting itself. It is made on a high heated iron board with 2 blunt metal pieces. The cutting up and mixing of the koththu is done using two blunt metal blades. This clashing of metal on metal creates a very distinctive sound.

King coconut is called as “Thembili” in Sri Lanka. King coconut juice is called the life-giving fluid.
The water of the king coconut is probably the most nutritious and wholesome drink that nature has provided for people living in tropical countries such as Sri Lanka. It tastes sweeter than the usual coconut water.
It is commonly used Sri Lankan traditional remedy for many ailments relating to impurities in the system. It is naturally sterile and is therefore, a good substitute for saline. Coconut water is said to be an ideal drink to cure kidney disorders and dissolve kidney stones. Those suffering from difficulty in urination (stranguria), frequent urination (polyuria) and other urinary ailments could get relief by drinking coconut water.
The king coconut consists of bioactive enzymes such as acid phosphatase, catalase, dehydrogenase, diastase, peroxidase and RNA-polymerases which help in digestion and metabolism.
Despite the light consistency, its water has a much better composition of minerals such as calcium, iron, manganese, magnesium and zinc than some fruits such as oranges. King coconut water is also a very good source of B-complex vitamins such as riboflavin, niacin, thiamin, pyridoxine and folates. 9. Kavum, Sri Lankan milk toffee & Other Sweet meets

Sri Lankan sweet meats are made during special events and festive seasons. Kavum also known as oil cakes is made from treacle and rice flour cooked in deep fried oil and its shape and taste is unique. Other than Kavum, there are many other sweets such as Kokis, Aasmi, Milk toffee and Aluwa which are scrumptious for your sweet tooth.

18. Deep fried casava(Manioc) chips

This is not an origin of Sri Lanka. I think it is a latin dish as Casava is eaten plenty and considered a main source of carbohydrates there than in Sri Lanka where our main source is rice.
However munching some cassava or manioc chips are a snack that you cannot stop eating after starting. It is available in most of the road side hawker shops and a packet would cost you about 100 Sri Lankan Rupees. There is an old saying that not yet scientifically proven which says cassava kills cancer cells and better than chemotherapy as it kills both cancer cells and good cells.

Coconut roti is a flat cake made out of flour and coconut mixed together and roasted on an iron thawa. Hot coconut roti goes very well with a well-seasoned katta sambol. A Sri Lankan tea after such a meal is heavenly.
I have tasted the best coconut roti and katta sambol on a road side shop somewhere in Kandy road. You can fill your stomach just under 100 Sri Lankan rupees (Less than a 1 US$). How amazing is that.

Gotukola (Centella asiatica) has many health benefits. Sri Lankans usually eat 1 raw salad with their rice and curry. Gotukola is one of those salads that make a perfect rice and curry.

If not the best tea with a royal service can be obtained at the Dilmah tea lounge in Colombo. There is Dilmah tea lounge at chatham street Colombo 01 or at the Independence arcade in Colombo 07 and you will be shocked to see what wonders tea can make. This is something I recommend totally.

The authentic Lamprais consists of Lamprais Curry, Frikkadels, Brinjal Paella, Chili & Onion Salad, Ash Plantain Fries, Deep fried boiled Egg and of course, the Rice all neatly wrapped in a banana leaf.
Wrapping in a banana leaf while the food is hot gives a nice aroma and a divine taste to the rice.

Cashew trees are abandoned in Sri Lanka. However the price of cashew nuts are not so cheap for Sri Lankan wallet as majority is exported due to the high demand from other countries. There is no wonder regarding the high demand from all over the world of this healthy, super delicious snack. The problem with roasted cashew nuts is that, once you eat you will need to eat more and more.
Cashews are a good source of antioxidants. Alkyl phenols, in particular, are abundant in cashews. Cashews are also a source of dietary trace minerals such as copper, manganese, magnesium and phosphorus.
You can buy from cashew shops and the prices are bit lower than super markets. If you want to buy in bulk head over the Royal cashew shops at Kohuwala or Borella as they have vacuum packed bags at lesser prices. In fact roasted cashew is an ideal gift to give your loved ones.

Fish & Potato Cutlet, great Sri Lankan snack recipe for any occasion

Cutlet is a savory tasty snack that you can eat anytime of the day for your main meals or even as an evening snack or as a party food. Everybody loves cutlets due to it’s savory taste and the crispiness in out and softness in inside. I can eat so many cutlets and I have no idea would I ever get fed up of tasty cutlets.
I make cutlets to spice up a dinner table or bring that ooze to a birthday party or even when we go for picnics.
You can make different kinds of cutlets, such as vegetable cutlet, fish cutlet, fish and potato cutlets, prawn cutlets, Polos cutlets or there could be many variations that you can come up with. I believe this is a Sri Lankan snack.

Yields: Makes 20 cutlets of bite sized cutlets

 
 
 
 

Ingredients - Filling

  • 150 g Fish, Easier to take canned tuna fish
  • 150g Potato, boiled & mashed, should have bit smaller pieces
  • 1 Big Onion, Finely chopped
  • 5 garlic cloves, Finely chopped
  • 1 Teaspoon Ginger, Finely chopped
  • 5 Green chiles, Finely chopped
  • 1 Tea spoon Lime Juice
  • 1/2 Tea spoon Turmeric & Chile Powder each
  • 2 Tablespoon Oil
  • Salt to Taste
  • For Batter: 50g Wheat Flour, Pinch of salt and turmeric, 3 cups bread crumb and oil to deep fry

Method:

  1. Making The Cutlets >> Heat a nonstick pan with oil in medium heat. Then add chopped garlic & ginger. Add the onions and fry it till it gets translucent. Now you can add precooked canned tuna fish into the pan and & mix it well for about 5 minutes. Put the heat on low and add chili powder, turmeric, pepper & salt, mix the mixture well. Add mashed potatoes and mix well. Add lime juice & also salt for taste. Let it cool for about 10 minutes and now you make the cutlets to any shape you like. Grab a small handful and slowly form into ball. Put all the balls in a tray. Note: The most important part when you are forming the cutlet ball, to make sure you don't have any cracks on your cutlet ball. If you have a crack then the cutlet will burst & open when it´s frying.
  2. Making the Batter>> In a medium bowl, mix the flour, water, salt and turmeric into the batter. The batter has to be the consistency as the binder gum you use for pasting. Now cover the cutlet ball one by one in the batter first and then roll over the bread crumbs and cover the full ball with bread crumbs. Some people like to put it in the flour batter again and cover with bread crumbs again and make it 2 court batter. But I prefer with 1 court of batter. It is your choice.
  3. Deep Frying>> Heat the oil in a large frying pan in medium heat. When the oil is ready(starts bubbling at the bottom of the pan), Dip the cutlets one by one and deep fry the cutlets in batches till you get a nice golden brown colour outside of the cutlet. Drain the excess oil in kitchen towels.

Serving:

Serve hot and crispy with tomato ketchup. Kids will love it.
This can be eaten with rice, hoppers and bread as well.

Evolve from plain hoppers to other different types of hoppers

Apart from the plain hoppers, you can find few other versions of hoppers such as egg hoppers, milk hoppers, honey hoppers , savory hoppers and etc.
  • Plain Hoppers – Cooked with just the plain original hopper batter
  • Egg Hoppers – An egg, pinch of salt and pepper is poured into the center of the soft hopper and cook
  • Milk Hoppers –A sweetened condensed milk is poured onto the center of the hopper and cook.
  • Honey Hoppers – Mix the hopper batter with some honey until you get a brown color batter and cook the hopper in a usual way
  • Savory Hoppers – Add an egg with a mix of bell papers cut into small squares, chopped onions chopped green chilles, tomato cut into small pieces, pinch of salt and pepper. You can also add some pieces of cooked chicken, shrimp or any other meat you like and make it more filling and healthier.
  • Nutella Hoppers – Make the plain hoppers in the usual way and apply Nutella while the hopper is hot and fold it like a wrap. I have added a banana on top of the Nutella spread and rolled. Kids love it and ask more and more.
  • Cheese Hoppers – Make the plain hopper and when its halfway done sprinkle some grated cheese on top of the hopper and it will give you cheese hoppers.

How to Make Plain Hoppers at Home

Prep time: 4 hours
Cook time: 30 min
Ready in: 4 hours 30 min
Yields: Serving – 4 people, 20 hoppers

 
 

Ingredients

  • 400g Rice flour, You can buy the hopper mix from the store
  • 5g Yeast
  • 2 Tea spoons Sugar
  • 100 ml Water
  • 200 ml Coconut milk
  • 1 teaspoon Salt
  • Hopper pan (Non Stick for better and easy results)

Method:

  1. Mix yeast, sugar and water and set it aside for 10 minutes
  2. Mix the rice four, yeast mixture, water and coconut milk. Make sure to mix thoroughly and not to have any lumps.
  3. Close the mixture properly and let it season for 4 hours a minimum.
  4. After 4 hours, the mixture will be double the size.
  5. Add the salt and give it a good stir.
  6. Heat the hopper pan and once its ready add about 30 ml of the batter and make sure you turn the hopper pan such that the batter will cover the whole pan and a little bit of the batter stays in the middle eventually which forms the soft center. Check the video.
  7. Close the lid and cook it for 30- 50 seconds in medium heat.
  8. Use your spatula and take the hopper from the pan and enjoy hot!

Consistency of the Rice Flour & Coconut Milk Batter

Batter is swirled along the pan and an egg is poured on to the middle. Close the lid and cook 1 minute in medium heat.

Sri Lankans eat hoppers with Chille Sambol (Grinded paste of shallots, red chile, salt and lime), chicken curry or fish curry. Sour fish curry and tender jack fruit curry also tastes great with hoppers.
Some people who are fond of sweet teeth like to eat it with juggery and a banana.
